This can be obtained with short rows or by increasing/decreasing the number of stitches. I didn't know I had done something "wrong" at the time, but got many compliments on the distinctive nature of that sweater. The two types of stitches have a different visual effect; the knit stitches look like "V"'s stacked vertically, whereas the purl stitches look like a wavy horizontal line across the fabric. To secure a stitch, at least one new loop is passed through it.
Some yarns are dyed to be either variegated (changing color every few stitches in a random fashion) or self-striping (changing every few rows). The third needle type consists of circular needles, which are long, flexible double-pointed needles.
Even a beginner can make a simple scarf with novelty yarn in just a few hours, and have it look just fantastic. Good luck with your knitting.
